Creamy Delicious Coconut Porridge
Sprinkle a taste of tropics on your day, while indulging on the yumminess of this creamy delicious coconut porridge.
The rich texture of oats with the tropical flavour of coconut result in a warm and comforting porridge that will set the pace for a positive, productive and blissful day.

And that they are a source of vitamins, minerals, fibre and antioxidants?
Ingredients

1 Cup of rolled oats (Avoid instant oats because they are too processed.

2 Two cups of water

3 Soup spoons of organic creamed coconut

1 Pinch of sea sal
TOPPING
-
1 Cup Frozen Berries
- Organic Chia seeds (1 Tea spoon to sprinkle)

1 Soup spoon of organic creamed coconut
PREPARATION
- Start by taking the berries out of the freezer and reserving 1 cup in a bowl to defrost while you prepare the porridge. To help the process, cover berries with hot water.
- Boil water on a kettle… or by traditional means.
- In a medium size pan, place the oats, water, organic creamed coconut** and pinch of salt.
- Add twocups of hot water
- Stir the mix and cook in medium heat, stirring constantly until creamy (around 7-10 minutes, depending on oats and heat).
** In case the creamed cocounut has turned hard due to low temprature, place the pack in a cup with water in order to melt.
NOTE: Stop cooking your porridge when it is at your favourite consistency. I like my porridge to be very creamy, almost like baby food! James, on the other hand, prefers a more solid texture. If you are sharing your porridge, I suggest you come to a previous agreement on the consistency not to spoil the pleasurable indulgent moment of eating this heavenly creamy porridge! 😉
* (1 US Cup = 240 ml)
TOPPING

Pour porridge into bowl and place berries on the top. (If there is too much water as a result of defrosting, keep the liquid in a cup. It makes a delicious berry juice!)

Add the organic creamed coconut on the sides of the bowl, while the porridge is still hot, so that it melts and spreads around the bowl (see photo).

Sprinkle top with Chia seeds.
- For a bit if extra healthy sweetness, add some date syrup or maple syrup.
